Since moving to the US I have started eating and loving mushrooms. This dish was named after Louisa Tetrazzini - a fabulous opera singer from the early 1900's
She toured the world but loved San Francisco. The chef at her favored hotel there created it for her. Chicken, mushrooms, spaghetti in a rich chicken cream sauce, topped with Parmesan. It is delicious - recipe from epicurious.com
